This cheese was developed by accident when mold developed in a batch of Cheshire cheese. Named after the region of England where it was first enjoyed, Shropshire Blue is now produced deliberately by introducing blue mold to the cheese before pressing, resulting in a brilliant array of blue veins throughout the bright orange cheese. Shropshire blue offers a superb balance of strength and richness, with a flavor that really satisfies. One of our favorite cheeses, we love it as much as our Mature Blue Stilton from Cooper Thornhill. That says a lot! Made from pasteurized cow's milk. |
