Caribbean cuisine is a delightful mix of hot and cool, a melting pot of ingredients and methods drawn from Europe, the Americas, Africa, and Asia in which cloves, peppers, marjoram, and garlic figure heavily. Little Caribbean Cookbook contains such favorites as Johnny Bakes, the Creole version of scones; Pepperpot, a treat throughout the Caribbean; and, of course, many dishes that include rum--from omelettes to cocktails.
